Soil (type, exposure, altitude): moraine, loose, sandy slope with exposure to the south, north, east and west.
Altitude 650 meters above sea level
Harvest: manual, end of August.
Vinification: Cold maceration in the press for 5 hours and subsequent soft pressing, fermentation at controlled temperature (14 °C) for 12 days.
Sparkling wine with Classic Method and aging "sur lies" for 18 months.
Sensory notes: brilliant, old rose.
Fine and persistent perlage, fruity nose with hints of cherry, currant and small red fruits; closing crust of bread.
Dry, fresh and savory in the mouth, with a persistent finish.
Suggested pairings: fish and shellfish cruditès, lobster stew, blue fish tempura; venison tartare, cured meats, short-aged cheeses.
Curiosity: Neblu is an autochthonous Aosta Valley vine with black grapes and is traditionally vinified in red wine.
Since 2005 Les Cretes has started the vinification into sparkling wine, giving life to a unique classic method of its kind.
