Winemaking
The selected bunches, not destemmed, are pressed and left to macerate for 48 hours at a cold temperature (5°C) and then gently pressed.
Fermentation takes place in French oak barrels of various vintages with frequent batonnage. After a year in wood, the wine from the different barrels is blended in stainless steel barrels for another year.
