VINIFICATION: The must ages 12-16 months on the fine lees with a minimum addition of sulfur dioxide to avoid damage during malolactic fermentation. The refinement phase takes place for six months in French oak barrels
COLOR: Light ruby color.
FRAGRANCE: Soft hints of berries, cherry and strawberry, with floral hints of mulberry and violet and hints of white pepper alongside distant scents of tobacco and porcini mushroom.
PAIRINGS: Excellent with good cuts of beef and foie gras poêlé. It pairs well with poultry whether cooked simply, glazed or caramelized. For cheeses, it pairs well with the more flavorful types such as Chaource, Brie de Meaux, Tomme, Reblochon, Cantal, Mont d'Or, Époisses.
FLAVOR: With a surprisingly pleasant and multifaceted structure, it presents an excellent and complex roundness, with a lively freshness alongside a full body.
