Vinification
The grapes are harvested by hand in crates and placed whole in the press, from which the free-run must is separated. Alcoholic fermentation occurs at low temperatures. After pressing, the must ferments partly in 500-liter French oak tonneaux and partly in stainless steel. After tirage, which occurs in spring, the wine remains in the bottle on the lees for at least 65 months. After this period, disgorgement does not include any liqueur, to fully respect the varietal's expression and the minerality of the soil.
Tasting
The color is intense straw yellow, permeated by a fine perlage that lingers in the glass. The aromas of flowers and yeast, with toasted bread crust and flint, develop intensely and are amplified by fresh salty and mineral notes. The palate is full and rich, with a remarkable persistence provided by the fresh acidity, which, enhanced by the subtlety of the carbon dioxide, makes this wine a pleasant accompaniment to a variety of dishes, both delicate and succulent.
