Harvest: Manual, second week of August
for the harvest of grapes to be dried and first week
of September for those to be vinified.
Yield per hectare: 40 quintals/ha.
Vinification: A portion of the grapes are dried in the sun
for at least two weeks in special drying rooms, enclosed
by thick lava stone walls. The remaining portion matures on the vine until September for the production of the
wine. After fermentation with indigenous yeasts, the grapes are macerated for approximately three months with the dried
raisins, previously destemmed by hand, which release sugars,
color, and aromas.
Aging: After a brief period in barrels for at least
six months, the wine is aged in steel tanks before
bottled.
Number of bottles produced: 19,000.
First vintage: 2011.
Pairings: Pair with seasonal fruits, cream-based desserts,
dough pastries. Serve at 12-16°C
