Soil: Volcanic, hilly and terraced on Pantelleria;
calcareous and sandy, flat on Marsala.
Training system: Pantelleria bush vines,
Guyot espalier on Marsala.
Acidity: 6.31.
Residual sugars: 2.20 g/l.
pH: 3.10.
Total SO2: 29 mg/l.
Harvest: Zibibbo, second week of September,
Grillo, first week of September.
Yield per hectare (q): 50 in Pantelleria, 60 in Marsala.
Vinification: From the roots of Pietranera and Grappoli del Grillo, after a rigorous manual selection of the
bunches, the grapes are destemmed, delicately pressed, and
cold macerated for approximately 24 hours. After
soft pressing, the must is left to settle at a low temperature
for 48 hours. The clarified part is then fermented in steel tanks at a
controlled temperature, using indigenous yeasts.
Aging: 7 months in steel tanks, on the fine lees.
Number of bottles produced: 26,000.
First vintage: 1997
Pairings: Pair with marinated fish, seasoned first courses,
vegetable soups, fish cooked in crazy water,
salted in salt, and grilled. Serve at 10-14°C.
