Harvest: Manual, in small crates, in the last
weeks of September.
Yield per hectare (hl): 20 Vinification: Manual selection
of grapes, soft pressing, natural sedimentation,
traditional fermentation in oak and chestnut barrels at
room temperature.
Aging: Aged in oak and chestnut barrels
with the addition of 5% younger wine each year,
using the traditional perpetual method.
Number of bottles produced: 8,600.
First vintage: 1980.
Pairing suggestions: Not to be reserved for the end of a meal, but to
pair with aged cheeses, braised meats, baked turbot,
bottarga, and oysters. At room temperature or
chilled, it is interesting and surprising as an aperitif.
