Vinification: Rigorous manual selection of the bunches,
soft pressing, to obtain a must that will be left
to settle naturally in the cold for 48 hours. The
clear part undergoes fermentation, using indigenous
yeasts, in temperature-controlled steel tanks.
Aging: 6 months on its lees in steel tanks
Number of bottles produced: 19,000.

Pairings: Pair with first courses based on whole-wheat
pasta, sea bass morsels, Sicilian
truffles from the Hyblaean Mountains. Best served at 10-12°C
