Vinification of the base wine: The grapes are chilled and subjected to a
bunch selection. The grapes are gently pressed directly (whole),
and, after spontaneous decantation of the must, the fermentation begins
in steel tanks. Fermentation then continues in French oak barrels (20% of the grapes)
at an indirectly controlled temperature,
with air conditioning. Fermentation is carried out using indigenous
yeasts and minimal use of sulfites.
Tirage: (August 2019) Addition of fresh must, always obtained from Grillo grapes
from the following year, present in the same vineyard, and following the
same method used for the base wine. The fresh must is added
to the wine in proportional quantities to dilute the alcohol content and provide the
amount of (natural) sugar necessary for the secondary fermentation. The must content does not exceed 15%, which is why the wine fully qualifies as a
vintage wine.
Aging: 50% of the base wine ages for 12 months in stainless steel, while the remaining
50% ages in French oak vats on its lees.
