Training system: Pantelleria bush vines; 2,500
vines per hectare.

Reducing sugars: 165 g/l.
Acidity: 8 g/l.
Harvest: Manual, second week of August and
first week of September.
Yield per hectare (hl): 25.
Vinification: 50% of the grapes are dried in the sun
for at least four weeks in special drying rooms,
bounded by thick lava stone walls. The remaining
grapes ripen on the vine until September. Once
fermentation is advanced, the previously dried
grapes are added and left to macerate for about three months
until a balanced ratio between the
alcohol and residual sugar is achieved.
Aging: 30 months in 225-liter French oak barrels
and 6 months in stainless steel tanks.
