Vinification
The grapes are harvested by hand into crates and then placed whole in the press, where the free-run must is separated. Alcoholic fermentation occurs at low temperatures. After pressing, part of the must ferments in 500-liter French oak tonneaux and the remainder in stainless steel. After tirage, which occurs in spring, the wine remains in the bottle on the lees for at least 65 months. After this period, disgorgement does not include any liqueur to fully respect the varietal's expression and the minerality of the soil.
Tasting
A fine and persistent perlage spreads through an intense straw yellow color. The aromas express themselves in an embrace of red fruits and hints of aromatic herbs typical of the high Langhe hills, enveloped by the nuances of the long aging on the lees. A remarkable freshness is supported by the creaminess of the carbon dioxide and the body provided by the time spent on the lees. Its remarkable persistence makes it a fantastic accompaniment to a variety of dishes.
