Vinification
The grapes are harvested by hand in crates and then placed whole in the press, where the free-run must is separated. Alcoholic fermentation takes place at low temperatures. After alcoholic fermentation, the wine ages on the lees for a period of aging, during which several bâtonnages are performed. The tirage is carried out in the spring with the addition of selected yeasts, and the second fermentation in the bottle, including the period of aging on the lees, lasts at least 30 months. The bottles are then disgorged and topped up with the same sparkling wine, without the addition of any liqueur d'expedition.
Tasting
The wine has an intense straw yellow color, with a fine and persistent perlage. The aromas range from bread crust to yeast and dried fruit, with some floral notes. On the palate, the entry is full and rich, with good acidity and a creamy sensation, provided by the fine foam, which cleanses the palate and provides good aromatic persistence.
