SENSORY ANALYSIS:
A delicate pink color reminiscent of onion skins.
Intense and velvety aroma of red fruits with hints of peach and orange. On the palate, it is smooth, well-structured, with lovely freshness and a rounded finish. A very fine and persistent perlage.
TERROIR:
The Pinot Noir and Chardonnay grapes ripen in the vineyards around the village of San Paolo, at an altitude between 300 and 500 meters above sea level, on the calcareous dolomitic soil of the Mendola massif, with sandy and clayey deposits. The southeast exposure, the constant ventilation brought by the downdraft winds, and the temperature range between day and night create a unique microclimate that allows the grapes to ripen with an optimal acidity-sugar ratio.
VINIFICATION:
Ripe grapes are harvested strictly by hand. Soft pressing of the
whole bunch. The base wine matures in steel tanks for
several months. Subsequent fermentation in the bottle according to the
classic method and at least 24 months of aging on the lees.
