Vinification
Alcoholic fermentation takes place in vertical steel tanks at approximately 16°C, before further lowering the temperature to prevent any malolactic fermentation. The wine is bottled in late spring. Thanks to the low fermentation temperature, the yeasts inhibit their fermentation activity, leaving a residual sugar content of approximately 5-6 grams per liter, which helps the varietal expression of the Riesling.
Tasting
The wine has a straw yellow color with greenish highlights. The nose is fruity and delicately tropical when young, with vegetal notes that, as it ages, give way to a pronounced minerality and hydrocarbon notes typical of the grape variety. On the palate, the entry is full, savory, and fruity, supported by a lively freshness and a persistence that lingers throughout the tasting.
