1 BOTTLE X 75cl.

We have chosen to have vineyards distributed in all the vocational units defined in the Franciacorta zoning to have grapes that express the wide range of characteristics that this territory, so small but so heterogeneous, can give. Each plot is enhanced in its identity through separate vinifications from which we obtain base wines with a well-defined personality. Only after careful tastings, in the spring following the harvest, are they blended to create the cuvée that best expresses our project and our idea of Brut Franciacorta. Thus was born our Spensierata Franciacorta Brut.


THE VINEYARD
Geographical location: in the municipalities of Gussago, Rodengo Saiano, Ome, Fantecolo, Passirano, Monterotondo, Adro, Coccaglio.
Soil characteristics: typical of the 6 vocational units of Franciacorta.
Agronomic model: organic management with start of conversion in 2014 and certification in 2017.
Soil management: deep tillage of the inter-row and mechanical cleaning of the sub-row.
Vine nutrition: use of plant biomass and green manure practice.
Yield per hectare: 80/90 quintals of grapes per hectare.
Variety: pure Chardonnay.
Average age of the vines: 17 years.


THE WINE
Harvest: selected and hand-picked grapes in 15 kg boxes.
Parcel vinification: 7 parcels vinified separately.
Vinification: soft pressing of the whole bunches with fractionation of the musts (45% free-run must, 15% second course must).
Fermentation and maturation of the base wines: in steel.
Aging on the lees: minimum 30 months.
Alcohol content: 12.80%.
Residual Sugar: 4 gr/lt.
Acidity: 6.30.
Sulfur dioxide: 52 mg/lt.


THE GLASS
Perlage: fine and persistent.
Colour: bright and brilliant straw yellow.
Bouquet: complex bouquet with notes of white flowers and hints of yellow pulp fruit intertwined with balsamic notes and spicy references.
Taste: entrance of delicate freshness and sapidity, enveloping and balanced with a pleasant finish of toasted nuances and hints of honey.
Pairings: ideal for an aperitif and for pairings throughout the meal, especially for risottos, fish dishes, white meats.
