Pensiero is the cuveé obtained from a specific selection of Chardonnay. Pressed between 0.5 and 0.8 bar (the other Blanc SOGNO is pressed at 0.48 bar), ferments and ages in 225 l wooden barriques for 7 months.

Bottling in spring 2017 and resting on the yeasts for 58 months.

Bottles produced: 1807
