Porcelain founder Hubert Tse comes from a long family tradition of spice production and chose to create a gin based on Chinese botanicals to introduce their uniqueness to the world. The distillery is located in the northeastern province of Liaoning.

Overview

Porcelain gin is distilled from 18 selected botanicals, over 90% of which come from the Tse family's own production and the local market. The final recipe was chosen after more than thirty iterations, leading to the name "Shanghai Dry Gin" to emphasize its territorial origins. The packaging also reflects the extreme care taken to imbue the gins with a regional character, with a bottle reminiscent of iconic Chinese porcelain vases: it was designed by artist Lala Curio and produced in Hong Kong.

Distillation takes place in a custom-built 500-liter copper still named Mulan; The main botanicals simmer overnight in the boiler to develop intense aromas, while the fresher botanicals pass through the infusion chamber. The aromas are then further combined and refined through a six-plate vertical reflux column before being cooled in the condenser.

The main botanicals in Porcelain Shanghai Dry Gin are Mongolian juniper, goji berries, Sichuan pepper, cardamom, coriander, almonds, hazelnuts, orange, lemon, and grapefruit peels, mandarin, rose, and six secret ingredients. Mandarin gin also features mandarin zest.
