This contrada has mantained a wild nature, rich of calcareous soils that reflect the sunlight creating the ideal conditions for the cultivation of the grapes 

Territory of origin: Contrada Cavadiserpe - Menfi (AG)

Variety: Alicante Bouchet 60%, Merlot 40%

Wine type: Rosso Terre Siciliane IGT

Soil: Calcareous, loose-paked

Yield per ha: 9000 kg/ha

Vine density per ha: 4000 - 4500 plants / ha

Altitude: 150 - 250 m asl

Exposure: South facing

Vinification: Maceration of the grapes for 8 - 10 days at 25 °C

Maturation: 6 months in barrique

Bottle ageing: 3 months

Colour: Vibrant red wine just as intense as Sicily’s sunsets

Nose : Aromas of plum jam, hints of herbs and spices such as thyme and licorice

Palate: Structured, intense and harmonious, a great blend of wood and wine tannins

Serving temperature: 16 - 18 °C

Food matching: Lamb chops coated with breadcrumbs, and roast potatoes with rosemary

Cellar life: 5 - 7 years
