Our anchovies are caught and cured for at least 5-6 months, then cleaned, filleted, and carefully arranged by hand according to ancient Sicilian tradition. They are then coated in seed oil to preserve their freshness.
Campisi anchovies are excellent eaten pure or as a sauce for pasta and salads. They are excellent as an aperitif with bread or on pizza and focaccia.
