This is the Cabochon family's vintage Brut, obtained from the soft pressing of select grapes and the result of over 54 months of aging on the lees. On the palate, it is ample and generous, with great complexity, balanced with an acidic and salty finish characterized by notes of exotic fruit.

MICROCLIMATE:
The Monte Rossa hill is part of the
ring of hills south of Lake Iseo that
mark the beginning of the subalpine zone and
separate the lake from the Po Valley.
The vineyards are therefore located in the area
of the passage of the air currents that
are developed by thermal exchanges
between the plain and Lake Iseo
