SETTEDUE Extra Brut is a conscious reaffirmation of the company's legacy. It is a wine that interprets Monte Rossa values in a contemporary way, translating memory into modern language. A return to the essence that respectfully draws from the past while using history as a driving force for evolution.
TASTING NOTES
Straw yellow tending towards gold, with good intensity. The nose is greeted with hints
of green apple and kiwi. On the palate, it is harmonious, and the acidity complements the sip well.
Settedue Extra Brut combines technical vigor and expressive depth.

Franciacorta DOCG, morainic hills of
the municipalities of Bornato, Brescia, Cazzago San
Martino, Passirano, Adro, Iseo, Rodengo
Saiano.
CRU:
22 crus spread across 78 hectares of vineyards
strategically distributed throughout the
Franciacorta region.
SOIL STRUCTURE:
Glacial morainic soil in the Monte Rossa hilly area,
plus some sandy and clayey soils.
GRAPE VARIETIES USED:
80% Chardonnay, 20% Pinot Noir.
CUVÉE:
80% wines from our best crus and
20% reserve wines.
TRAINING SYSTEM:
Spurred cordon 70 cm from the ground, Guyot.

5,000 vines/ha
AVERAGE VINE AGE:
18 years.
AVERAGE GRAPE YIELD PER HECTARE:
Maximum: 95 quintals per hectare.
GRAPE SELECTION:
In the vineyard with manual harvesting into crates.
VINIFICATION:
Soft pressing of the grapes with selection
of the best part of the grapes, no more than
55% of the yield. Each cru is vinified
single-variety.
FERMENTATION:
85% in temperature-controlled steel
vats and 15% in oak barrels.
BOTTLE AGEING:
At least 30 months.
PRODUCTION:
20,000 0.75-liter bottles
