GRAPE SELECTION: In the vineyard with manual harvest
in crates
VINIFICATION: Soft pressing of the grapes with selection of the best part of the
grapes, no more than 48% of the yield. Each cru is vinified as a single-variety wine. FERMENTATION: In steel and 220-liter oak barrels
between September and February.
AGEING: Over 40 months.
Tasting Notes: Upon tasting, this sensational Franciacorta sparkling wine presents a pale yet brilliant pink color, with a fine and persistent perlage. The aroma is precise, with hints of medlar and fresh almond. The slightly vegetal finish is worthy of great vintages. The palate is rich, dense, and full of personality. The finish has a light citrus note with hints of almond, typical of Cabochon.
