Maria Pia Castelli's first vintage, "Amima" 2023, is a blend of equal parts Verdicchio, Trebbiano, and Malvasia di Candia grapes grown on vines planted in stony, sandy soil rich in minerals and iron, yielding just two bunches per vine.
The bunches are meticulously harvested between late August and mid-September, keeping them separate by variety. They are gently pressed without destemming, and the free-run must is fermented with indigenous yeasts in old concrete vats. The first 18 months of aging take place in concrete vats for the Verdicchio, in tonneaux for the Trebbiano, and in glass ampoules for the Malvasia. After blending and bottling, the wine is aged for another four months in bottle before release.
