The Tristan Hyest house was founded in the heart of the Marne Valley, in Trélou-sur-Marne, where family tradition meets a modern, artisanal vision of Champagne. After inheriting the family vineyards in the early 2000s, Tristan Hyest developed an independent production based on absolute respect for the terroir and the valorization of individual parcels.

The winery works primarily with Champagne's iconic grape varieties—Pinot Meunier, Chardonnay, and Pinot Noir—grown sustainably with minimal intervention in the vineyard and cellar. Fermentation occurs spontaneously with indigenous yeasts, dosages are very low, and aging on the lees can last several years, resulting in deep, vibrant Champagnes with a strong territorial identity.

Tristan Hyest cuvées are produced in limited quantities, often as micro-vinifications of individual parcels, and are distinguished by their precision, minerality, and elegance. Each bottle expresses the authentic soul of the Marne Valley, with a contemporary style that combines freshness, complexity, and natural expression.
