Valpolicella DOC Classico Superiore Pruviniano Collection is a dry red wine with a subtle elegance and a spiciness that reflects its origin from the Marano valleys, in the Valpolicella Classica. Excellent with traditional Veronese first courses and cured meats, it is undoubtedly an authentic Valpolicella Superiore that delights the senses with its fruity aroma of cherry and currant, floral violet and spicy pepper, nutmeg and ginger. The flavor is fresh, lively, dry and persistent thanks to the right balance and fine tannins.
THE VINEYARD Located in the heart of the Valpolicella Classica, in the hamlet of Prognol, on dry terraces. Altitude from 200 to 250 meters above sea level South-east, southwest exposure. Soil type: silt-clayey, sometimes calcareous. Grassing of the vineyard. Training system: espalier and part with Veronese pergola. Age of production vines: 15 years. Load of buds per vine: 9-18. Plant density: 3,300 / 5,000 vines per hectare. Yield per hectare: 20 hl.
THE PRODUCTION Harvest: September until the beginning of October exclusively by hand. Crushing with destemming of the grapes. Fermentation temperature 25-28 ° C. Maceration for 10 days with programmed punching down at a frequency of 3 per day for 20 minutes. Aging in steel and then in the bottle for about 12 months. Complete malolactic fermentation. Stabilization: natural.
COMBINATIONS IN THE KITCHEN. It goes perfectly with traditional Veronese dishes, such as lasagna with rabbit and tortelloni with Monte Veronese. Excellent with salami.
