AOC Champagne

Production Area: More than 86% of the grapes come from Grand and Premier

Cru: Aÿ, Avenay, Champvoisy, Cuis, Louvois, Tauxières, and Verzenay.

Grape Variety: 60% Pinot Noir, 25% Chardonnay, 15% Meunier

Vinification: A blend of a portion of vintage wines and a

majority of reserve wines, some of which are aged in magnums for between 7 and

15 years. Aged for more than double the time required by the

appellation.

Dosage: 6-7 g/l, Brut

Aged on the lees: 36-42 months

TASTING NOTES

Golden color, with very fine bubbles.

Nose: Beautiful aromatic complexity, ripe fruit and spicy aromas, hints

of toasted apples, apple compote, and peaches.

Flavor: A subtle combination of structure, length, and vivacity. Velvety bubbles

. Aromas of pear, brioche, and spicy notes, with hints of fresh walnut.

Pairings: Any fish, especially sushi and sashimi, seafood,

grilled shrimp and lobster. Poultry and white meat. Parmesan cheese, good

cured ham.
