Bitter taste. Very particular, appreciated by those who prefer unusual honey.

Astringent, tannic, bitter odor, however pleasant, it goes well with cheeses that are not too spicy and with sweet notes, Caciotta, Puzzone di Moena, mature goat cheeses. If too fresh the honey could prevail.
