THE PRIVILEGE OF BEING ABLE TO SELECT THE GRAPES
In a property that extends for 2,500 hectares, we have chosen to select and put into vineyards only the most suitable lands, a small part of the total area, so unique in terms of soil type, microclimate and exposure, as to deserve a DOC entitled to them: the DOC Bolgheri Sassicaia.

PRODUCTION AREA Bolgheri. The production plants are located at an average altitude between 100 and 300 meters above sea level, with West/South-West exposure.

VARIETY Cabernet Sauvignon, Cabernet Franc

TYPE OF SOIL Strong presence of calcareous areas rich in galestro and stones and partially clayey

VINIFICATIONSelection of the grapes through a sorting table, to eliminate impurities and any presence of imperfection. Soft pressing and delicate destemming of the grapes using machinery suitable for not breaking the integrity of the berries and avoiding excessive transfer of tannins. The alcoholic fermentations (completely spontaneous and without the addition of external yeasts) concluded at the end of October and carried out regularly and at controlled temperatures not exceeding 27-28 °C. Frequent delestages and outdoor pumping over allowed for excellent aromatic extraction and freshness in terms of acidity of the musts. The malolactic fermentations, (always without inocula), took place in steel at the end of November. In the first week of December 2020, after frequent decanting to clean the musts, the wine was placed in oak barriques.

BOUQUET The nose is broad and rich in nuances with a nice mix of dark fruits and spices, combined with hints of citrus fruits and undergrowth notes.

PAIRINGS Meat of all kinds and fine game

TASTE Structured and full, characterized by a good energy and soft and fresh tannins. The finish is long and complex.

AGING At the end of the malolactic fermentations, the wine was placed in barriques using 45% new wood, 45% first passage and 10% second passage. We used French oak barriques (Troncais, Allier and Jupilles in particular) with fine grain and medium toasting so as not to exceed in the transfer of tannins. Sassicaia 2020, after more than 25 months of aging in wood, was decanted into steel tanks and further selected before final blending and then bottling. Subsequent refinement in the bottle before being marketed.
