Vinification and aging: Destemming, spontaneous fermentation, and maceration for 3-4 months in truncated cone-shaped oak vats with 3-4 manual punching down until the end of fermentation. Racking and aging in used barriques for 5 years, with occasional rackings if necessary, and over 10 years in bottle.
