Vinification and aging: Destemming, spontaneous fermentation, and maceration for 3-4 months in truncated cone-shaped oak vats with 2-3 manual punching down until fermentation is complete. Racking and aging in 25- to 35-hl oak barrels for 36 months, with occasional rackings if necessary, followed by an additional 18 months in bottle.
