Vinification and aging: Destemming, spontaneous fermentation, and maceration for 3-4 months in truncated cone-shaped oak vats with 2-3 manual punching downs daily until fermentation is complete. The wine is drawn off and aged in 25-35 hl oak barrels for 36 months, with occasional rackings if necessary, and 12 months in bottle.
