Panettone Milano is the modern panettone from Pasticceria Perbellini, which aims to innovate within a classic tradition.

The dough is made with butter, flour, sugar, and only egg yolk—no egg whites—to create a yellower, softer, and moister texture, typical of traditional Milanese panettone. The dough is kneaded over five leavening cycles and then enriched with a selection of candied orange and citron peels and soft sultanas.
