We have been growing this small, golden-yellow plum with firm, aromatic flesh for over thirty years. The fruit reaches its peak aroma when fully ripe, falling on its own from the tree. For this reason, we spread nets over the grass and, at the end of the day, for over a month, we collect the fruit that nature has chosen to drop. This mellow, creamy distillate is ideally paired with very mature mountain cheeses such as Asiago, Vezzena, Monteveronese, Carnia, Castelmagno, and Pecorino.
